Red Berries
Our berries aren't rushed. We monitor our patches daily, waiting for that perfect shade of deep crimson that signals maximum sweetness. Each berry is hand-picked in the cool of the early morning to preserve its firmness and natural juices. By avoiding heavy machinery, we ensure that only the best fruit makes it to your basket, leaving the delicate plants unharmed for seasons to come.
Because we prioritize local heritage varieties over mass-produced cultivars, our berries are chosen for flavor rather than "shelf-life." We don't use chemical sprays to artificially ripen or preserve our fruit; instead, we rely on the natural timing of the sun. This means when you taste a berry from our farm, you’re experiencing the true, concentrated essence of the fruit—the way nature intended.
Honey Bees
Harvesting honey is a delicate partnership between us and our bees. We use low-intervention methods to ensure the colony remains healthy and unstressed. Once the bees have capped the honeycomb with wax, their signal that the honey is cured and ready, we carefully remove only the surplus. Our honey is cold-extracted to maintain the natural enzymes, pollen, and complex floral notes that define our local landscape.
We believe that a happy hive produces the finest honey. Our apiaries are strategically placed near diverse wildflower meadows to provide our bees with a balanced diet. We never over-harvest, ensuring our colonies have enough of their own stores to thrive through the winter. This ethical approach results in a "living" honey that is rich in local pollen and unique seasonal nuances that change from year to year.
Mushrooms
Whether grown in our dedicated dark rooms or sustainably foraged, our mushrooms are harvested with a "root-first" philosophy. We use precise cutting techniques to protect the mycelium networks, ensuring the soil remains vibrant and productive. Each mushroom is inspected for texture and gill quality, then immediately placed in breathable packaging to maintain that earthy, "just-harvested" aroma and snap.
Our harvesting doesn't just take from the land; it helps it. By using specialized mesh bags during our forage, we allow spores to drop back onto the forest floor as we walk, effectively replanting for future seasons. For our cultivated varieties, we use organic substrates and recycled materials, closing the loop on our farm’s waste and producing mushrooms with a dense, meaty texture and superior nutritional profile.
